For loose tea, use about 3 grams (approximately 1 rounded teaspoon) of dry leaves for every 6 ounces of water. However, since the weight of teas can vary widely, you may want to add more tea for lighter varietals such as oolongs and white teas.
As with coffee, always start with fresh, clean, cold water. Bring water prepared for Black, Dark Oolong, and Herbal teas to a rolling boil as these are best prepared with boiling water. Green teas, on the other hand, are better prepared with water brought to approximately 170-180ยบ F, since boiling water will cook the leaves and ruin the flavor. If you do not have a thermometer, this temperature is approximately the point when bubbles begin to rise.
Steep for the proper length of time. The smaller the leaf size, the faster a tea infuses. In general, green teas should infuse for a shorter amount of time in order to avoid over cooking, whereas darker and herbal teas should steep a bit longer.
